In System Preferences > Keyboard > Shortcuts > Accesibility

I have an few hotkeys in the Zoom cagegory. I occasionally hit one of
these that I don't want. I'd like to disable it by *clearing* the
field. I may even have tried that in the past since the
key-combination assigned is obscure.

Anyone know how to clear these fields. I've tried myriad modifications
of the delete key but haven't found the secret code yet.

Did you try unchecking the checkbox to the left of the command?

I'd simply disable them by clearing the checkbox:

Select the shortcut, hit delete.
